Our final Roundtable of 2024 was hosted by Ally Member Thomas Oh and the newly opened PERILLA Steakhouse! Members and guests were treated to a delicious breakfast of sandwiches and sides provided by PERILLA. Dave Gonzales spoke about what to expect when opening a new restaurant. His biggest tips were to plan on doing some homework, don’t rush into anything, add some extra time in your schematic planning, and build out a schedule because something always comes up that can cause delays.
